Bringing a wealth of talent to his role as Executive Chef, originally from Australia, Nicholas has lived and worked in Asia various establishments over the past ten years. It was his Father that taught him how to cook at an early age and he has gone on to have successful careers that have seen him work in some of the best restaurants in Sydney and Melbourne. In his native country, Nicholas worked for The Botanical Melbourne and Ritz Carlton Sydney. He successfully opened 5 restaurants, 1 hotel and oversaw banquet operation ranging from 100 people to 5000 people in all exclusive locations throughout Asia, The Great Wall of China fashion show dinner being his personal favorite. Spending 8 years with Shangri-la group he experienced the Beijing Olympics in 2008 and then opened Shangri-la in Taiwan during the period from March 2009 to October 2010. After that he worked in Dalian and re-opened their famous Chinese restaurant which won “China Top 10 Restaurant” Golden Pillow Award of China Hotel in 2011 and 2012. His experience and passion for finding fresh local produce and best material in the world, while at the same time embracing avant-garde technology is what makes Nicholas’ cuisine so sought after.
